Pork & Pineapple Street Taccos
White sauce and pickled jalapeno and onion: In a small bowl combine sour cream, lime zest, 1 T water, 1 lime juiced, garlic, salt and pepper. In a second small bowl, combine diced jalapeno, 2/3 c onion, rest of lime juice, 1 tsp sugar, a pinch of salt and pepper.
Slaw: In a mixing bowl combine slaw mix mayonnaise, 1 tsp rice vinegar (reserve remaining for pickling, and a pinch of pepper. Combine remaining rice vinegar, 1 tsp sugar and jalapeno in a microwave-safe bowl. Microwave 1 minute. Stir and put in slaw mix.
Pork: Saute 1/2 cup onion in a little olive oil until soft. Coarsely chop pulled pork. Add pulled pork to onions an stir occasionally until heated through. Stir in Sweet chili sauce and pineapple tidbits. Heat.
Warm Tortillas. Build taco: pork, cheese, white sauce, pickled jalapeno and onion, slaw mix.
